Oh, Winter.  You double-edged sword.  I appreciate the months without the glaring heat.  I understand the necessity of the cycle to allow for new growth.  But you took my farmers market away for three whole months!  I haven’t liked many things about Oregon, but I will say this, I have come to adore the farmers market.  And being without my local eggs, grass-fed and free range meat, fresh honey, and locally grown, organic vegetables has been difficult this year. Today I wasted an hour on a webinar that was only trying to sell me a service.  I took it because I thought the seminar would talk more about gaining confidence, but instead it was about how lack of confidence holds you down and why you should spend $150 to join the speaker’s “Confidence Club”. 100 Ways of EarthFit- Day 11: Tuna recipes

Whenever I’m cooking, I have several questions in mind.  First, is the food healthy?  Can I make the recipe healthier?  Can I substitute something with less saturated fat or fewer calories?  Second, is the food sustainable?  Is eating this food contributing to the decline of certain species?  Is it farmed, caught, killed, harvested, or produced in sustainable ways?  And lastly, is the recipe flexible?  If I didn’t come up with the recipe myself, I tweak it a bit until I have a recipe I created on my own.  Can I change the flavors without losing the taste?  Will my picky husband eat it?   Continue reading 100 Ways of EarthFit- Day 11: Tuna recipes

100 Ways of EarthFit- Day 8: Something Worth Writing About

I thought I might be on a role today.  I finished my grocery shopping and did NOT buy unnecessary snacks (although I was tempted more than once).  I stayed within my calories, drank a pre-workout, took all my supplements, and went to a new gym to do a 20 minute interval on the elliptical and a 20 minute round of Death By Goblet Squats.  I did cave and snack on some corn tortilla shells while making Teriyaki Tofu Lettuce Wraps for dinner. But all I needed and wanted to do this evening before I wrote my post was to complete my Glute Exercises so I would have “something worth writing about”.
