I am a strong supporter of healthy food challenges with alliteration-style names, so obviously, I am a big fan of Meatless Monday. In fact, Meatless Monday had started a bit of a craze for me. If I could, I would try to pair each day of the week with a different Eating Green challenge. Continue reading 100 Ways of EarthFit- Day 71: Meatless Monday Goes Vegan
I recently finished a book called “Veganist” by Kathy Freston, and I felt the urge to share some of my insights while listening to the book. The subtitle of “Veganist” is”Lose Weight, Get Healthy, and Change the World”. Wow, it sounds like this book is right up my alley! I was very open minded about the idea of going vegan, and even agree with the author’s philosophy of “leaning” into the new lifestyle. Continue reading 100 Ways of EarthFit- Day 34: All or Nothing
I’m experiencing an influx of inspiration due to what I believe is the truly most wonderful time of the year. It’s not just pumpkin season, although pumpkins are certainly the kings of the gourds. It’s winter season, when many of our favorite fruits and vegetables have gone dormant and won’t sprout again until April or even later. So, having food that is as versatile as pumpkin available in the winter time is a blessing. Continue reading The Most Wonderful Time of the Year Part 2
I am very late on the writing of the post, but I think it’s better late than never. And we’re still in the midst of what I think is the most wonderful time of the year. However, I have to admit, that commercialization of this season is really starting to get to me, and I almost faltered, not doing ANY pumpkin flavored recipes until this past week. I have been looking for a way to eat more animal friendly lately. I have a few issues with cheese, but for the most part, I actually really love it! Cottage cheese, cream cheese, cheddar, mozzarella. But the more I learn about our food industry, particularly hear in the United States, the more I am realizing that I should say farewell. That is, until I borrowed a book from the library that may have actually changed the way I cook. And now I can have my cheese AND eat it too! Continue reading Have my Cheese and Eat it, too
WARNING!!!!!! INCREDIBLY OFFENSIVE AND EXPLICIT LANGUAGE AHEAD!
This should be the only time I use this type of language on here, but I truly cannot help it.
Truth be told, I myself actually have quite a colorful language in daily life. But I recognize it as unprofessional in many instances, and try to not let the cursing flood out of me when I first meet a new friend or colleague.
But this isn’t about me anyways. This is about the Thug Kitchen Cookbook, and their motto, or tagline, is actually “Eat like you give a f*ck”, so with that phrase in mind, I am pretty sure you are aware this post is going straight to hell in a hand-basket. Continue reading Thug Kitchen- Eat Like You Give a Frack!
Embarking on this journey to live fit and green has been empowering, but I am very grateful that I am not going at this on my own. I have found a plethora of books that have helped me make better consumer choices and create healthier, more environmental habits.
Recently, I have been reading an enjoyable book, “Do One Green Thing” by Mindy Pennybacker. I like it for its simplicity and positive focus on small changes one can make in their diet, homes, and travels to help the planet. October 1st is World Vegetarian Day. In the spirit of eating less meat, I decided to fix one of my favorite vegetarian dishes, tofu wontons. These are easy to fix, but I unfortunately don’t know how to make a SMALL batch, so it can be somewhat time consuming if you are making more than 10.
